Author and nutritionist Kathryn J. Pollard has been teaching others how to find optimal health through a healthy dietary pattern for decades. This diet is one based on whole plant foods; a general way of eating allows for a healthy lifestyle and comes with the bonus of living a sustainable life responsible for using the least resources and the lowest carbon footprint within our power. Author of the popular guidebook Eating Does It: Healing Ourselves and Our Planet with Food, Kathy is the Research Projects Manager for the American College of Lifestyle Medicine, and adjunct faculty for the University of New England Graduate Nutrition Program. She is among the first instructors chosen to teach for the renowned T. Colin Campbell certification course in plant-based nutrition, which she taught for many years. As she covers in her first book, the most effective action anyone can take to address the world’s biggest challenges (health, disease and climate change) is through diet - it has the power to optimize health, combat both climate change and rampant chronic disease, and address pathogens, systemic inflammation and greenhouse gas emissions, all without waiting for big policy changes, international cooperation, or costly drugs or medical procedures—and it’s free.
